Ästad Vingård is an organic vineyard, spa hotel, and Michelin-starred restaurant in Tvååker, Halland, Sweden, situated within and adjacent to the Åkulla beech forests nature reserve. A family property in its third generation, it is the expression of a single founding conviction: that the agricultural, culinary, and sensory potential of this specific landscape in southern Sweden could be realised without compromise.

About

The Carlsson family’s relationship with this land spans generations. The grandparents were among the first organic dairy farmers in Sweden. When Linda, Mattias, and Daniel took over in 2010, they returned to agriculture but chose a different crop: approximately 30,000 vines of the Solaris grape, one of Sweden’s most promising white varieties, alongside smaller plantings of Chardonnay and Pinot Noir, all farmed organically and certified under the Swedish KRAV ecological standard. From this beginning grew a hotel, a spa, and a Michelin-starred restaurant. Each is an extension of the same root system.

The twelve nature reserves surrounding the vineyard are not background. They are the raw material for Sinnenas Spa. Spa of the Senses is a literal translation of the Swedish, and it describes the founding design brief precisely: a spa environment whose scents, sounds, materials, and spatial concepts are drawn entirely from the specific natural landscape of Halland County. Ambient soundscapes were recorded in the surrounding forests, at the edges of the local lakes, in the wind moving over the fields, and then mixed with subtle melodic elements. Fragrance compositions were developed in collaboration with a Swedish fragrance house, each environment assigned a distinct natural signature: warm forest soil, moist autumn leaves, freshly sawn timber. The materials are local wood, natural stone, and water. The result is a spa that smells like the forest it is built next to, which turns out to be the only thing the body needs it to smell like.

The spa circuit moves between heat and cold in the Nordic tradition. The wood-fired Underwater Sauna, viewable from inside through a glass wall that places the forest on the other side of the steam, is the property’s most distinctive single element. Spring water ponds inhabited by rainbow trout and crayfish provide the cold immersion. An outdoor heated pool at 39°C remains open year-round. The Eld (Fire) Sauna and the full indoor spa environment complete the circuit. The Smakbaren tasting bar serves wine, beer, and small dishes within the spa environment, allowing the vineyard’s own production to enter the restorative experience without interrupting it.

Every room at Ästad Vingård has a private sauna, an architectural decision that places the Nordic thermal ritual at the centre of the overnight stay rather than as an optional spa facility. The rooms range from the new Sjöparken category with natural pool jetties, outdoor showers, and lake access, to the Kvarnbäcken Premium with natural stone bathtubs, to the cosy timber Backstuga cabins beside the stream. The visual language throughout is quiet Scandinavian modernism with organic material references.

Restaurang ÄNG holds a Michelin star and operates from the landscape in the same way the spa does: local, seasonal, and specific. The kitchen works with KRAV-certified organic production and draws from the fields, meadows, and forests of the surrounding Halland region. Restaurant Logen provides Nordic cuisine in a more informal register. Smakbaren integrates wine and food within the spa. The Vineyard Bar connects the production story to the hospitality experience directly.

Programs & Retreats

Sinnenas Spa is open daily 08:00 to 23:00 for hotel guests and day visitors. The spa circuit includes the wood-fired Underwater Sauna, spring water ponds with rainbow trout and crayfish for cold immersion, outdoor heated pool at 39°C, Eld (Fire) Sauna, indoor bathing and shower environments, and Smakbaren tasting bar for wine and food within the spa environment. Day spa visits are available by session (morning, afternoon, or evening). The Vineyard Package combines a guided vineyard tour, wine tasting, four-course Farmer’s Menu dinner, overnight stay, and breakfast. The Spa Package Plus adds Sinnenas Spa access and dinner at ÄNG. The Total Experience spans two nights with the ÄNG tasting menu and full estate access. Guided vineyard tours, wine tastings, and seasonal activities connect the agricultural dimension of the property to the stay throughout the year.
