Healing Depth 1 Restore by Healing Guide

Above the Slow Food village of St. Daniel in the Gailtal valley in Carinthia, at the edge of the Geopark Karnische Alpen and twenty minutes from the Italian border, der Daberer has been a bioclimatic organic hotel since 1978, the first of its kind in Carinthia, built in regional timber, clay and linen, with a NaturSpa across four levels that includes a forest sauna and forest pond in the surrounding woodland, a kitchen holding four Gault Millau toques that bakes its own bread daily, ferments its own vegetables and brews its own Kombucha from organic regional produce in one of Austria’s most deeply rooted Slow Food landscapes, a decades-running alkaline fasting programme, daily yoga, Pilates and Qigong, and a philosophy that has been undogmatic, honest and genuinely lived by four generations of the same family since 1928.

Der Daberer

A four-star superior organic hotel in the Gailtal valley in Carinthia, family-run since 1928 and organic since 1978, where bioclimatic architecture, a NaturSpa with forest sauna and forest pond, a Slow Food kitchen with four Gault Millau toques, a decades-running alkaline fasting programme, daily yoga and guided hikes in the Carnic Alps give the stay a quality of ecological and culinary conviction that forty-six years of consistent practice have made effortless and undogmatic.

About

The Gailtal is one of the quieter valleys of Carinthia, running west to east between the Carnic Alps to the south and the Gailtaler Alps to the north, with the Italian border a single mountain ridge and twenty minutes away. St. Daniel, where der Daberer sits above the valley floor at the forest edge, is one of eight Slow Food villages in Carinthia and part of one of the first Slow Food Travel destinations designated anywhere in the world. The landscape is not dramatic in the way of the higher Alps but it has the particular quality of intact rural Carinthia: wildflower meadows, crystal-clear mountain lakes, the ancient geology of the Geopark Karnische Alpen, and a pace that belongs to the valley rather than to any programme.

The origins of the property lie in a mineral-rich spring at the forest edge that prompted the founding of a Kurbetrieb in 1928. In 1978, the second generation took that inheritance in a direction that most of their neighbours considered eccentric: an organic guest house at a time when organic was not yet a category, let alone a philosophy. Four generations and nearly a century later, what was eccentric is simply the way things have always been done here, and the consistency of that position, maintained without dogma, without trend-chasing and without losing the warmth of a family that genuinely likes the people who come to stay, is what gives the property its particular character.

The bioclimatic building, oriented south to capture passive solar energy through generous glazed surfaces, was built from regional materials: timber, clay, linen. There is no WiFi in the rooms, only a LAN cable, which is not a policy statement but simply the way it has always been. The NaturSpa spans four levels with indoor pool, hamam, three indoor saunas and two outdoor saunas, and slightly apart from the main building, a forest sauna and a forest pond with a raft and meadow. The forest pond is the quality indicator: most wellness hotels would not have the confidence to build something this quiet and this unglamorous as a central feature of the spa offer.

The kitchen is the heart of the house and has been for a long time. Four Gault Millau toques in 2025. Bread baked daily. Vegetables fermented in-house. Kombucha brewed on site. Fresh trout from the hotel’s own pond. Regional producers selected by the same logic the property has applied since 1978: healthy common sense rather than certification anxiety. The five-course gourmet evening menu, all three meals included in the rate, is the expression of a kitchen that treats Slow Food not as an aesthetic but as a position.

The alkaline fasting programme, daberer.detox, has been running for several decades and combines fasting with spa access and yoga. Marianne Daberer is a founding member of the regional Slow Food Convivium. The hotel is climate-neutral with a self-sufficient ecological hot water supply and environmentally certified operations.

Highlights

The combination of nearly a century of history at the same location, organic credentials that predate the organic movement by two decades, a Slow Food kitchen with four Gault Millau toques, a decades-running alkaline fasting programme, a forest pond in the woodland behind the spa, and the particular undogmatic quality of a family that has been living what it believes since 1978 without ever needing to explain itself make der Daberer one of the most grounded and authentically rooted wellness properties in the Austrian Alpine landscape.

Der Daberer has been doing the same thing since 1978, and the four Gault Millau toques confirm that it has gotten better at it every year. The bread is baked in the morning. The trout is from the pond. The forest pond is there when the sauna is done. Italy is twenty minutes over the ridge. That is enough.
